Abby's vegetable salad.
Deborah asked for it, so here it is. This is about as much veggies as you can get in one mouthful.
1 medium sized tomato diced. Or a bunch of cherry tomatos chopped in half.
1 carrot sliced into bite sized pieces
1/3 of a cucumber, quartered and cut into bite sized pieces
1/2 green pepper cut into bite sized pieces
cauliflower or celery or something else good cut into bite sized pieces.
1/2 cup of parsley, choped coarsely
8-12 green olives chopped in half. Or kalamata if you like them better.
2-3 green onions, chopped
1/2-1 avocado chunked
1/2 cloves garlic minced really small
Salt and pepper to taste
Mix everything. Feel free to add a dressing, though with the avocado and the garlic it dosen't really need one. Maybe a little olive oil if you must.
