Arroz con Leche
1 c rice
1/2 c sugar
2 tsp cornstarch
1/2 tsp salt
1 2/3 c whole milk
1/2 lemon worth of zest
2 T butter
1 tsp vanilla
4 egg yolks
1/2 tsp cinnamon
1 1/2 c cold water
Bring the water to a boil.Add rice, reduce heat, cover and cook until rice is done, about 20 minutes.Mix sugar, cornstarch and salt in a separate bowl.Add to the rice with the milk and lemon zest. Increase the heat and bring to a boil, stirring constantly until the sugar has dissolved.
Remove from the heat and add the butter and vanilla.
In a separate bowl beat the egg yolks.Slowly add 2 cups of the milk and rice mixture to the eggs stirring frequently.Add this back to the rice mixture.Return to the heat and cook 2 minutes until it starts to boil.Remove from heat and pour into bowls.Sprinkle cinnamon on the tops and cool.
