Asian Chicken Salad
2 boneless. grilled chicken breast halves without skin
3 cups shredded Napa cabbage
1 cup shredded red cabbage
1/4 cup red peppers, julienned
1/4 cup carrots, iulienned
1 T sliced green onions
1/2 cup Spicy Peanut Dressing (below)
leaves from 1 sprig of cilantro
Thinly slice chicken breast on a bias. Place all ingedients except cilantro leaves in a mixing bowl and toss. Garnish with cilantro leaves.
Spicy Peanut Dressing
3 T peanut butter (natural, no sugar added)
3 T sesame oil
1 T soy sauce
2 T rice wine vinegar
1/4 t. cayenne pepper
Place peanut butter in a mixing bowl and whisk all other ingredients.
Makes two servings.
