Best Christmas Cookies

  - From Claire, who says: Remember when we made cookies of our friends & teachers?  They were these!
 
3/4 c butter
1 c sugar
2 eggs
1/2 t flavoring (lemon and vanilla are both good)
2 1/2 c flour
1 t baking powder
1 t salt
 
Cream shortning & sugar.  Mix dry together.  Mix all together.  Refrigerate at least 1 hour.  Roll out and use cookie cutters.  Bake for 6-8 minutes at 400 degrees.
 
Note: I like to make lots of different icing colors (just a mix of milk & powdered sugar with candy coloring (much stronger than standard food coloring)) and put a different flavor in each (again, candy flavoring is stronger than the standard, though not necessarily better).  Then your cookies can be multi-flavored and very colorful.  Naturally, a multitude of sprinklings & sugars should be used too.
