Big Salad. 

What to make when you need a complete meal, but don't feel like cooking.  Yet another here or there sort of recipe for one.  - Patricia

 

I make this a lot on weekends when I am hungry but don't want to face actually cooking.  I tend to have lettuce prepped and in a bowl on a regular basis, so this is a no brainer for me, but maybe you don't.  However, you may have bags of lettuce in your fridge.  Same deal.

 

Start with a big bowl.  Bigger than you would think.  Your salad needs room to move as you eat it.  Otherwise you will end up scraping the best bits off the table.

 

Bottom Layer:

 

Lettuce, or lettuce blend.

Maybe some shredded carrot

Maybe some chopped celery

Whatever ever sorts of vegetabl-y things you have, chopped bite sized.

 

Dressing.

Yes, put your dressing on NOW.  This way the lettuce gets coated with dressing and it will rub off on the other things as they pass by on the way to the bottom of the bowl.  You can used bottled dressing, or make your own, but what I usually do is drizzle olive oil on, then follow with a sprinkle of some sort of vinegar (balsamic, red wine, or cider, depending on my ingredients) I just pour it into the cap and hope it doesn't all land in one place as I throw it on the lettuce.  Then I follow with a sprinkle of Italian seasoning and then salt and fresh ground pepper.

 

Cheese

Feta, or cheddar are two of my favorites.  Usually  grated or crumbled, but small cubes would be fun too.  Parmesan would be good too.

 

Nuts, if you have them.

 

Can of tuna, drained. OR

Tofu or smoked tofu diced. 

 

When you have all your layers built, sit down and eat.  You will find that your fork picks up just the lettuce unless you make a conscious effort.  I don't make the conscious effort because I'm usually reading.  Then, and I consider this the best part, all the non-lettuce things have fallen to the bottom of the bowl and I get wonderful mouthfuls of nuts, tuna and cheese, coated with dressing.  Delicious!
