Crust
1/2 c butter
1/2 c brown sugar
1 c flour
Preheat the oven to 325.
Mix everything together and spread into a 9" x 13" baking dish. Bake for 10-12 minutes.
Filling (this can be doubled to make a richer and gooier bar. That is how I like it)
2 eggs
1 c brown sugar
1 tsp vanilla
2 Tbs flour
1/2 tsp baking powder
1/4 tsp salt
1 1/2 c coconut
1 c chopped nuts
1 lemon worth of zest
Preheat oven to 375.
In a small bowl mix the dry ingredients. In a large bowl beat the eggs. Add the sugar and vanilla. Add the dry ingredients. Add all of the remaining ingredients and mix. Pour over the crust. Bake for 20 minutes or until the top is golden brown and the center is no longer jiggly. Cool
Icing
2 c powdered sugar
1 lemon worth of juice
Mix and pour over the coconut bars. Cut and serve
