Divine Coconut Lemon Bars with walnuts

These are always a huge hit at parties.  Can be made a few days ahead of time as they keep well (if you hide them)

 

Preheat oven to 325

 

Crust

1/2 c butter

1/2 c brown sugar

1 c flour

 

Mix sugar and butter.  Add flour and mix well.  Spread 1/4 inch thick into a 9 x 13 baking dish

Bake for 10 minutes or until the edges of the crust start to brown.

 

Meanwhile...

 

Turn up the oven to 375

 

 

Filling

3 eggs

1 1/2 c brown sugar

1-2 tsp vanilla

3 Tbs Flour

3/4 tsp baking powder

1/2 tsp salt

2-3 c coconut (depending on how gooey you want the bars.  More coconut=less gooey)

1 1/2 c chopped walnuts

2 lemons worth of zest

 

In a small bowl mix the flour, baking powder and salt.  In a considerably larger bowl mix the eggs, sugar and vanilla. Add the dry ingredients to the wet and mix.  Add the coconut, lemon zest and walnuts and mix.  Pour over the crust and bake for 20 minutes or until the top starts to brown and no longer wiggles.

 

Let cool completely and cut into squares.

 

Icing

2 c powdered sugar

1-2 lemons' worth of juice (depending on their juicyness)

 

Mix.  Spoon over cut squares.  Eat!
