FRENCH LENTIL SALAD
Cumin Viniagrette ingredients:
2 T lemon juice
2T orange juice
1 t sherry vinegar
½ c. extra virgin olive oil
½ T ground cumin
salt & pepper to taste
Lentils Ingredients:
1 ½ C French (green) lentils
Salt
4 c cold water
1 c diced roasted pepper
1 c thinly sliced scallions
3 T chopped fresh mint
½ c (2 oz) crumbled feta cheese
Freshly ground pepper
Prepare Viniagrette:
Place juices, vinegar, oil, and cumin in glass jar and seal tightly. Shake vigorously to
combine. Season with salt & pepper to taste. (Can be refrigerated 2 weeks)
Prepare Lentils:
Place lentils, 2 t salt and cold water in medium saucepan. Cover and bring to the
start of a boil over high heat. Reduce heat to low to maintain a simmer and cook the
lentils, stirring occasionally, until they are tender, 25 to 35 minutes.
Drain lentils and transfer to medium-sized bowl. Let cool slightly.
Add red peppers, scallions, and mint, tossing to combine.
After salad has cooled to warm, add the feta (cool enough not to melt the cheese).
Add 1/3 cup cumin vinaigrette to lentil mixture and toss. Add more vinaigrette if
desired, and season with salt and pepper. Serve salad warm.
Serves 4.
