Markrid brought these extremely delicious, sandy-textured cookies to a meeting. She says she made them up, but here's what she could remember:
About those cookies: Never the same twice, hence waffling. Here's what I remember:
1 c. butter (I used 1/2 canola oil)
1/2 c. maple syrup
3/4 cup sugar (I used date sugar, which I'd bought on impulse as a novelty)
1 egg
1 tsp vanilla
3/4 c. oats
1 c. granola (why not just use all oats?)
2 c. flour (I went to town: mix of graham, millet, brown rice, unbleached white. Brown rice makes sandy texture. I guess some Scots use some in their shortbread. Note to self: try fake Pecan Sandies sometime.)
some leavening - I forget - maybe 1/4 ea. baking powder & soda
some salt - up to you
Then the toasted walnuts & cranberries, 1 c. each. Pre-toasting the nuts is risky because they like to scorch but enhances deliciousness
