Lisa Cicotte's Pumpkin Pie from Thanksgiving at Las Bugambilias, Oaxaca
(I think this is the same recipe as the one on the side of the Libby's Pumpkin can, but it sure was good)
Beat 2 eggs lightly and combine with:
1 C sugar
1 C evaporated milk or half & half (I used half & half)
2 C pumpkin (1 can)
1 t cinnamon
1/2 t ginger
1/2 t nutmeg
1 t salt
Fill an unbaked pie shell and bake at:
- 425 degrees for 10 minutes,
- then 325 degrees for 50 minutes
