Oven roasted cauliflower with curry

Ingredients

 

1 medium sized cauliflower

Mustard oil

Parmesan Cheese

Classic Spicy Indian Curry sauce http://debfood.pbworks.com/Classic+Spicy+Curry+Sauce+%28Har-roz+ki+Kari%29

 

Directions

 

Place a roasting pan into the oven and preheat oven / pan to 425 degrees.

 

While the oven is heating, prepare the cauliflower as follows.

 

  1. Remove the stem

  2. Continue to hollow out the interior of the cauliflower where the stem used to be. Your goal is to remove all the tough green stuff without causing any of the florets to start to detach. When your finished you should have bowl shaped depression in the base of the vegetable approximately inches in depth

  3. Wash the cauliflower and pat dry

  4. Brush the exterior of the cauliflower with mustard oil (olive oil will work just as well). Then grate parmesan cheese onto of the cauliflower

 

Remove the hot roasting pan from the oven.

Place the cauliflower into the dish, top side down.

Pour curry sauce into the cauliflower and place in the oven.

 

Roast until the cauliflower is rich and caramelized and is almost starting to collapse in on itself.

Serve hot.

 

I suspect that this would work equally well with a nice puttanesca sauce (or any tomato based sauce)
