Patricia's Fruit and Nut Bread

from Abby, via Patricia Lopez, a Brazilian friend, who brought it to a Fellowship Dinner in February 2017.

 

Mix dry ingredients:

  • 1 1/2 c flour
  • 1/2 t salt
  • 1 t baking soda
  • 1 t baking powder

 

Mix:

  • 2 eggs
  • 1 c honey

 

Add flour mixture to eggs and honey; stir until well incorporated.

 

In separate, very large bowl, chop and mix these ingredients:

 

  • 4 c walnuts
  • 2 c pecans
  • 1 1/4 c prunes
  • 1 c figs
  • 1/2 c raisins
  • 3/4 c dates
  • 2/3 c apricots

 

(Optional: cranberries, almonds, other dried fruits and nuts)

 

Mix wet ingredients into chopped nuts and fruit.

Pour into two greased loaf pans.

Bake at 325 for 40-50 minutes, until top is golden.

Let cool completely (no, really: completely).

Cut into thin slices (1/2 inch thick).

Store by freezing with wax paper separating the slices.

Excellent toasted.
