Suggestions for Quick and Easy Meals
for when you are staring into the fridge saying, What does one eat again?
Rice, greens, fish:
- Brown rice
- Steamed chard or kale drizzled in sesame oil and seasoned rice vinegar
- Baked fish or some other kind of protein - perhaps chicken sausage, or tempeh stir-fry.
- Sometimes a yam.
Asparagus, egg, bread (from Alison):
- grilled asparagus with some garlic, olive oil, salt and pepper,
- with a sunnyside up egg served on top.
- crusty bread.
Broiled potatoes & brussels sprouts, with fish (from Marie):
- Cubed red potatoes boiled briefly
- then mixed with olive oil, dijon mustard, brussel sprouts, and pepper.
- Broil until crisp
- serve with grilled salmon or tuna steak.
Abby's breakfast wrap (egg, avocado, cheese):
- scrambled egg frittata thingy with caramalized onion
- melt cheese on top
- lots of avocado slices
- wrap in a tortilla.
Abby's vegetable salad - an explosion of veggies trapped in a bowl. Lots of veggies. No lettuce.
