Simple Sausage, Kale, and Potato Soup
Easy and fast but with a pleasingly full flavor, especially the next day. Recommended by someone in the Woodstock Cooks group.

- 1 T. avocado oil (or olive oil)
- 12 oz. kielbasa sausage, diced
- 1 c. yellow onion, diced (I used a whole onion, which was a little more)
- 2 cloves garlic, minced (I used 3)
- 2 lbs. red potatoes, cubed (I added a cup of yellow sweet potato)
- 2 c. kale, chopped (I doubled that)
- 3 c. chicken broth (more, with the potato and kale additions)
- 14.5 oz. can of coconut milk (recipe says full fat; I used low-fat and it was tasty)
- 1 1/2 tsp. salt
- 1/4 t. crushed red pepper flakes
- Heat the oil in a soup pot over medium heat. Add in the sausage and onion. Cook until sausage gets some color and the onions are slightly translucent (3-5 minutes)
- Add in the rest of the ingredients (garlic, potatoes, kale, salt, pepper flakes and broth). Bring to a boil and reduce to a simmer. Let simmer for about 15 minutes, until the potatoes are just tender.
- Stir in the coconut milk and let simmer a minute or two more.
- Taste for seasoning and enjoy!
