SHRIMP AND FETA STEW
Very good, very easy. Serve over rice. - Libby
1/4 C olive oil
1 onion, chopped
2 cloves garlic, minced
2 14 oz diced tomatoes with juice
2/3 C dry white wine
1 t dried oregano
11/2 t. salt
1 3/4 # shrimp, shelled and deveined
1/4 t fresh ground pepper
1/4 # feta cheese cut in cubes and 4 T chopped flat-leaf parsley (add after shrimp at last minute)
1. Heat oil in large saucepan. Add onion. Cook until translucent - 5 min. Add garlic. Cook and stir for 30 sec. longer.
2. Raise heat and add the tomatoes with their liquid, wine, oregano, and salt. Bring to a boil and cook over moderate heat, partially covered, stirring occasionally until thickened, about 30 min.
3. Add shrimp and pepper and bring to simmer. Simmer covered until the shrimp are just done - 2-3 min. Stir in cheese and parsley. The cheese goes in last min. so it barely melts.
