The original biscuit from Salt and Pepper in Somerville, MA

Page history last edited by agitlitz 15 years, 4 months ago

This are designed as sweet biscuits.  If you want to make them more savory, cut the sugar.

1 1/2 c flour

1/4 tsp baking soda

1 tsp baking powder

1/2 tsp salt

1 1/2 Tbs sugar

2 Tbs butter

2 Tbs Crisco

2/3 c buttermilk

fruit (blueberries, strawberries, etc), vegetable (canned sweet potatos are the best),  or meat (sausage and cheese, bacon bits)

Preheat the oven to 350.

Mix the dry ingredients.  Cut in the butter and crisco until they are pea sized.

Add the buttermilk all at once and blend with a few swift strokes (I actually mix it with my hands.  It is sticky, but fun).  Add anything else you want.

It will be pretty moist.  If you want a drier, flakier biscuit, cut th emilk by a bit.

Cut off globs the size of a tangerine and put on a baking sheet.  Bake for 30 minutes or until the top is golden brown.  Eat hot!
