Zucchini Bread Revisited

1 c. oil                             

3 eggs, beaten  

1 1/2 c. sugar              

1 tsp vanilla      

2 c zucchini   

2 c flour

1 c whole wheat flour

1 tsp soda

1 tsp baking powder

1 tsp salt

1 tsp cinnamon

1 tsp cloves

1 c walnuts

 

Preheat oven to 350.

In a medium bowl mix together the dry ingredients.  In a large bowl mix the oil, eggs and vanilla.   Add the dry ingredients and mix well.  Grate zucchini, let sit a moment, and then squeeze as much of the water out as you can with your hands. Add to the batter.  Add nuts.

Pour into 2 greased and floured loaf pans. 

Bake for 1 1/4 hours or until a tooth pick inserted into the center comes out clean.

 

**kitchen tip**

If you have problems with getting a loaf that is really high in the center and low on the sides, when you pour the batter in the pan push it towards the sides with a spatula and leave a low place in the center. When it cooks it will all even out
