Flaky Oat Scone

A fellow grad student used to make these and bring them to art history meetings. So good!
Makes 6
Ingredients
3/4 c all purpose flour
2 Tbs sugar
1 1/2 baking powder
1/2 tsp baking soda
1/4 tsp salt
2/3 c old fashioned oats
3/4 stick cold butter
1/3 c buttermilk
Add ins (pick a few that sound good to you)
lemon zest
dried currants
blueberries
orange zest
poppy seeds
Directions
- Preheat oven to 375.
- Sift together dry ingredients and put in food processor. pulse 15 times till oats are broken up.
- Add cold butter cut into pieces. Pulse until the mixture resembles coarse meal with pea size bits of butter. Transfer to mixing bowl.
- Add any dry add-ins to flour mixture. Add any wet add-ins to buttermilk.
- Add buttermilk to dry ingredients. Stir lightly until it just begins to hold together.
- Turn out onto floured surface. Knead six times.
- Pat into a one inch thick round and cut out scones with cutter, or tear into six equal pieces.
- Transfer to lightly buttered baking sheet (or use silicone baking mat).
- Bake in the middle of the oven until golden brown, 15-18 minutes.
- Serve warm or at room temperature.
