Greek Turkey Burgers

Ingredients

  • 1 bunch of fresh spinach (or 1 cup frozen chopped spinach, thawed)
  • 2 medium garlic cloves, minced
  • 1 Tbs olive oil
  • 1 pound 93% lean ground turkey
  • 1/2 cup grated parmigiana cheese or crumbled feta cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 4 small hamburger buns, preferably whole-wheat, split
  • 4 tablespoons tzatziki
  • 12 slices cucumber
  • 8 thick rings red onion (about 1/4-inch)

 

Directions

 

  1. If using fresh spinach, chop spinach into 1/2" strips. Wash well. 
  2. Heat olive oil in a saute pan over a medium heat. Add garlic and cook until just browned.
  3. Add Spinach. Cook until well wilted.
  4. Remove from heat and allow to cool enough to handle.
  5. Squeeze excess moisture from spinach garlic mixture.
  6. Combine the spinach with turkey, cheese, garlic powder, oregano, salt and pepper in a medium bowl; mix well. Form into four 4-inch patties.
  7. Preheat grill to medium-high.
  8. Oil the grill rack. Grill the patties until cooked through and no longer pink in the center, 4 to 6 minutes per side. (An instant-read thermometer inserted in the center should register 165 degrees F.)
  9. Assemble the burgers on the buns, topping each with 1 tablespoon tzatziki, 3 cucumber slices and 2 onion rings.

 

Tips

To make ahead: Prepare patties, wrap individually and refrigerate for up to 8 hours.

Tip: To oil a grill rack, oil a folded paper towel, hold it with tongs and rub it over the rack. (Do not use cooking spray on a hot grill.)
