Roasted Ginger Lime carrots

Bright, tangy, and so very good!
Ingredients:
- 6-8 carrots
- 1 Tbs olive oil
- 1 lime worth of zest
- 1 tsp grated ginger
- 1 Tbs lime juice
- 1 1/2 tsp honey
Directions
- Preheat oven to 400
- Slice carrots on the bias to roughly 1" chunks.
- Toss in a bowl with olive oil.
- Put on a rimmed baking sheet and reserve the olive oil in the bowl.
- Roast for 30-40 minutes, stirring half way through. Cook until browned and tender.
- While roasting combine ginger, honey, lime zest, and lime juice in a bowl with the remaining olive oil.
- When carrots are done, toss with the lime marinade and serve hot, or room temperature.
