Roasted Ginger Lime carrots

Bright, tangy, and so very good!

 

Ingredients:

  • 6-8 carrots
  • 1 Tbs olive oil
  • 1 lime worth of zest
  • 1 tsp grated ginger
  • 1 Tbs lime juice
  • 1 1/2 tsp honey

 

Directions

  1. Preheat oven to 400
  2. Slice carrots on the bias to roughly 1" chunks.
  3. Toss in a bowl with olive oil.
  4. Put on a rimmed baking sheet and reserve the olive oil in the bowl.
  5. Roast for 30-40 minutes, stirring half way through. Cook until browned and tender.
  6. While roasting combine ginger, honey, lime zest, and lime juice in a bowl with the remaining olive oil.
  7. When carrots are done, toss with the lime marinade and serve hot, or room temperature.
