Lucy Atkin's Fruit cake

Makes 2 large loaves or 3-4 small ones
Ingredients: list them here
- 1.5 cup raisins
- 1.5 cup dates
- 2 cup sugar (a little less)
- 2 cup boiling water
- 5 T butter
- 3 cup flour (measure with single cups, add 2 T per cup for altitude)
- 1 t soda
- 2 t cinnamon
- 1/2 t cloves
- 1 t salt
- 1 c nuts
- 1 cup glazed (candied) fruit
Directions
- In a thick bottomed sauce pan combine raisins, dates, sugar, water and butter.
- Bring to a boil.
- reduce heat and simmer for 20 minutes.
- Set aside to cool.
- Preheat oven to 325
- In a large bowl mix all the dry ingredients.
- Add nuts and lazed fruit.
- Stir in liquids.
- Line two loaf pans with greased brown paper (use parchment paper)
- Bake approx 1.5 hours
- Allow to cool completely and slice thin to serve.
