Fiesta Rice and Black Bean Salad

the salad

1 c uncooked Rice

1-2 15 oz.cans black beans

1-2 15 oz.cans corn, or fresh corn stripped off the cob, or frozen.

1 ripe avocado

1 red bell pepper

1 bunch green onions

 

-Cook the rice. Allow to cool.

-Rinse and drain the beans.

-Dice the pepper and the green onions.

-Toss everything together in a bowl.

 

dressing

1-2 cloves garlic

1 ripe avocado

1/4 c plain yogurt

1 T lemon juice

1 t ground cumin

salt and pepper to taste.

 

Mince the garlic in a food processor. Add the avocado, yogurt and spices and puree.

-add the dressing to the salad and mix well. Serve with tortilla chips and tomato wedges.
