Josie's Meatballs

Perfect for party food, served in a crock pot.  This is one of my favorite potluck bring alongs.  And for a decadent meal (all that peanut butter!)

Note this is from Josephine Cappiello, my gal pal and maid of honor from when Stu and I were married.  She grew up in Hawaii, her parents are from the Philippines and her Dad was a seriously good cook (military chef!).
 
1 lb ground turkey (pork is a good option)
1/2 cup scallions (1-2 scallions)
1/2 cup bread crumbs (not the kind with Italian seasoning!)
1 egg
1/4 cup soy sauce
 
Form meatballs.
 
Sauce:
1 cup crunch peanut butter
1 an unsweetened coconut milk
2-4 Tbs brown sugar (don't add too much!)
1 Tbs fish sauce
1 Tbs red curry paste (such as the 4 oz can of what we used to call the "lady" curry http://www.import food.com/cpma0409.html)
1/4 cup vinegar (white distilled) or tamarind
 
Later notes:
 
To fill large crockpot, double recipe
Put on low or high for 1 hour max (and watch it!)
Stir occasionally as it will stick
Add liquid as meatballs cook....
 
Add more red curry paste if you like spice (I always do)!
 
Good as party snacks or dinner with rice.
