Moroccan Carrot Salad
from Libby, via Abby (maybe from Gourmet magazine in the '90's?)
Serves 4

2 c shredded carrots
1/2 c raisins
2 T chopped fresh mint
1/2 c chopped nuts

Dressing
2 T olive oil
1 1/2 T lemon juice
1 clove garlic, minced
1/2 t sugar
1/4 t cinnamon
1/8 t ground cumin
1/8 t salt
