Abby's Orzo Salad
Abby says: "Light & yummy"
1/2 lb. orzo (dry)
2 stalks celery
1/2 bunch scallions
1/2 cup Kalamata olives
1/2 cup feta cheese
1/6 cup pine nuts
1/2 cup roasted red peppers
1 cup baby spinach
1/8 cup olive oil
salt and pepper to taste
1) Cook orzo to al dente.
2) Chop up celery and green onions.
3) Slice olives in half.
4) Crumble the feta
5) Cut peppers in strips.
6) Toss all the ingredients together and serve.
