Pecan Puffs


 

1 c. butter

1/4 c. sugar

2 c. chopped pecans

2 c. cake flour

2 tsp. vanilla

 

Cream butter until soft. Blend in sugar until creamy. Add vanilla, stir in flour and vanilla; add pecans. Roll dough into small balls. It is important that the cookies are no larger than one mouthful.  Place them on a cookie sheet. Bake for 10-12 minutes til pale brown.  Carefully move the hot cookies onto a plate and dust with powdered sugar WHILE THE PUFFS ARE STILL HOT.  Careful, they tend to want to explode into little crumb heaps. Cool and eat.
