Pozole - hearty Mexican Hominy stew.  Abby's new fave!

Pseudo Chinese Noodle Soup - a fast soup - :cook it in 20 minutes when you get home from work and it seems impressive and is a full meal

Scallop and Corn Chowder from the Oregonian's "Simply Affordable" recipe column. Yummy, a bit sweet (from the carrots and corn), and creamy without being too rich.

Shrimp and Feta Stew - Very good, very easy.  Serve over rice.
