Sour Cream Cranberry Coffee Cake
from the kitchen of Cousin Anna
The Cake Batter
4 Tbs unsalted butter
1 1/4 c sugar
2 eggs
1 1/2 c sour cream or yogurt
1 tsp vanilla
1 Tbs orange zest
2 c flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 1/2 fresh cranberries
Preheat oven to 350.
Mix sugar and butter. Add eggs one at a time.
Add flour and wet ingredients in three parts. Beat on low until smooth. Smooth into a greased pan. Sprinkle cranberries over the whole thing.
The Streusel Topping
2/3 c flour
2/3/c finely chopped nuts
2/3 c lt brown sugar
5 Tbs melted butter
1/4 tsp salt
Mix and sprinkle over the batter. Bake for 40-45 minutes until golden brown.
