Southwest Mashed Sweet Potato
from the kitchen of Cousin Anna
5 to 6 medium sized sweet potatoes
1 c sour cream
1/2 c butter, softened
1 4-oz. can chopped green chilis
3/4 tsp salt
1/4 tsp pepper
Peel potatoes and cut into 1-inch pieces.
Cover with cold water in a large pan and bring to a boil for 12 minutes, or until tender.
Drain and return potatoes to the pan.
Add remaining ingredients and mash with a masher until smooth.
