Cucumber Persimmon Salad


Throw together in proportions that look good to you:

 

Cucumber (thin slices, squeeze gently to get the juice out)

Fuyu persimmon (peel the skin, thin slices)

Combine rice vinegar, salt and sugar

Combine with cucumber and persimmon

Thai basil (chopped, spread on top) 

Toasted sesame seeds
