Roasted Tomato Relish

"It's basically roast the tomatoes and some shallots tossed with a little olive oil and kosher salt and then smash them together to the consistency you want (I like it a bit chunky). Then mix in a bit of olive oil (if needed), some balsamic vinegar, fresh or dried thyme and chopped garlic. Season with fresh pepper. I like it on bread for sandwiches, with eggs, or on chicken."
