Asparagus Grapefruit Salad

Asparagus Grapefruit Salad

1 lb asparagus, steamed, chilled, cut in 1-inch sections

½ c coarsely chopped nuts (I like pecans, lightly toasted)

2 whole red grapefruits, sectioned

3 c salad greens (Good mix is Boston and spinach)

 

Poppy Seed dressing (about 1/3 cup) Keeps well in refrigerator..

3 T sugar

¼ t dry mustard

¼ t salt

1 ½ T vinegar

1 ¼ t onion juice (from finely grating an onion)

¼ c salad oil (not olive!)

1 t poppy seeds

 

Poppy seed dressing also good with:

  • ·        Shredded red cabbage, thinly sliced avocado and grapes, halved.
  • ·        Slices of avocado alternating with red grapefruit sections

 

Alternate dressing for asparagus/grapefruit salad

2 T  olive oil

2 T  raspberry vinegar

2 T  lemon  juice

1 ½ t brown sugar

freshly ground pepper

 

 

Helen Corbitt’s original poppy seed dressing recipe that makes 3 ½ cups

1 ½ c sugar

2 t dry mustard

2 t salt

2/3 c vinegar

3 T onion juice

2 c salad oil

3T poppy seeds
