Louise Garrison's Cowboy Cookies

Cowboy Cookies from  Louise Garrison


1 c shortening
1 c G sugar
1 c brn sugar
2 eggs

2 c sifted flour
1 tsp soda
1/2 tsp salt
1/2 tsp B powder

2 c rolled oats quick
1 tsp vanilla
2 c choc chips

Blend together shortening & sugars. Add eggs. Beat until light. Add flour mixture and mix well. Add rolled oats, vanilla & choc chips. Drop from tsp on greased cookie sheet.  Bake 15 min. @ 350

Best with milk, even if you are an adult and prefer coffee.

MacLachlan modifications: double, triple or quadruple batch as needed.  Cookies and dough both freeze really well. Don't sift flour cause that's just time consuming and messy.  Besides if it's -40, humid, high or low elevation you nead more flour anyway and we all live in one of those climates. Throw in M & M's or whatever else strikes your fancy 'or the whims of the kids you are mixing it with'. An extra 1/2 cup of any dry ingredients won't make much difference.  Bake on Betty's favorite insulated cooking sheets for about 12-13 min. and then pull out and leave on cookie sheet on top of oven for a couple minutes - if you don't have one of these it's worth the $30 to buy one! Betty gave me mine and I still have them after 17 years.


And for the full impact of these cookies you absolutely MUST daydream while making them: walk Indian Creek with Val, Mullen weed fights, catch some fish, throw them back, climb through the barb wire fence between Quirk Ranch and into Louise's yard, stop to 'see Gramma' or in other words 'see if Gramma has any cookies' visit with Gramma a while,look at her flowers, meander down to Jane's house, catch and play with more fish on the way, or stop at the shed and talk with Uncle Lawrence, inspect his latest dead rodents . . . or not, hear his latest story, carry on exploration to any other locale on Garrison Ranch, eventually return home for supper at 5:30 but be at least 15 min late and always say 'sorry I'm late' the minute you walk through the door; otherwise it wouldn't be normal.  Start similar routine following day! :)
